What is seitan? What is authentic seitan?
Seitan literally means “made from protein”. Its story began more than 1000 years ago with the Zen Buddhists. They didn’t eat meat or fish. In their search for plant-based protein, they invented seitan. It has twice as much protein as tofu and twenty times less fat.
How is seitan made? How is authentic seitan made?
The Zen Buddhists grew wheat and spelt. Pesticides didn’t exist back then. They grew hardy ancient grains. After being harvested, the ancient grains were ground into flour. Undesirable starch and sugars were washed away with pure water, hot water alternating with cold. The result was a dough which was low in carbohydrates and high in protein. The dough was kneaded until it obtained the perfect texture. Seitan makers spend many years learning to acquire this skill. The Zen Buddhists cooked seitan in a flavoursome broth, made with traditional soy sauce, ginger, garlic and kombu algae. That’s how they created their delicious, protein-rich seitan.
How do the Bertyn seitan makers make their authentic seitan?
Today, the seitan makers of Bertyn still make authentic seitan. They’ve been making it for three generations, using ancient grains like Oberkulmer Rotkorn spelt and Manitoba wheat. They cook it in a traditional soy sauce, which has been aged in oak barrels for 15 months. They use the 500-year-old recipe of Yoshio Aoki.
